What activity history collects and where it lives
With the setting on, Windows records app and service usage per user: which programs you launched and for how long, files opened in Microsoft apps, and search activity. Windows 10 famously displayed this as the Timeline in Task View; Windows 11 dropped that view entirely, which is why most people don't realize the log still accumulates on disk and, for Microsoft-account users, on the account side. Nothing in the default Windows 11 interface surfaces it — the collection just continues quietly in the background.
Two stores matter. The local store sits on the device under your user profile and is what the Clear button in Settings empties. The cloud copy lives with your Microsoft account — it powers cross-device features and the activity pages in your privacy dashboard — and it only disappears when you clear it there, category by category. Turning the setting off stops new collection; it doesn't retroactively delete anything.

Clearing it and turning collection off
Open Settings > Privacy & security > Activity history. First hit Clear activity history in this store — that empties the local log on the device. Then switch off Store my activity history on this device so nothing new accumulates. On some builds you'll also see a Send my activity history to Microsoft toggle; if it's there, it goes off too. Windows 10 users find the same controls under Settings > Privacy > Activity history.
The cloud copy is a separate errand. Sign in at account.microsoft.com/privacy/activity-history and you'll see the categories Microsoft keeps — browsing, searches, location, voice and more — each with its own view-and-clear flow, plus a Clear activity history action for the account. Clearing there removes the data no matter which device produced it, but it doesn't switch off future collection; only the Settings toggles on each device do that.
Keeping it that way
Collection stays off until something turns it back on, but it's worth rechecking the page after each Windows feature update — big upgrades have a history of walking privacy toggles toward their defaults. If your goal is a generally quieter machine, combine this with the diagnostic data settings.
